Add the pisco, lime juice, simple syrup, and egg white to a shaker and shake for 15 seconds.
Add ice to the shaker and shake for an additional 15 seconds.
Pour the mixture into the glass. There should be a layer of foam on top of the drink.
Top with 3-5 drops of Angostura bitters.
