Drömmar (Swedish Dream Cookies)

Ingredients

  • 12 tbsp salted butter, softened (1 ½ stick)
  • ¾ cup sugar
  • 2 tsp vanilla sugar
  • 1 ½ cup all-purpose flour
  • ¾ cup cake flour
  • 1 tsp baker's ammonia

Instructions

  • Preheat the oven to 350F. Cream together the butter, sugar, and vanilla sugar until light and fluffy.
  • Add the all-purpose flour, cake flour, and baker's ammonia and mix until just combined.
  • Remove pieces of dough and roll into small balls of less than 1 inch in diameter. They should be about 2 tsp in size. Bake at 350F for 12-15 minutes until the tops are cracked and the bottoms are very slightly golden. The cookies should still be pale and look slightly dryer than the dough did.
  • Allow the cookies to cool on the baking sheet before attempting to transfer them, as they will be very delicate until fully cooled.

Notes

  • Baker's ammonia (ammonium carbonate) is an important ingredient in this recipe. It behaves differently from baking powder or soda, leaving behind no residual color or flavor in the final product and giving the cookies a delicate texture.
  • Larger drömmar tend to become more firm and the baker's ammonia can have trouble evaporating from larger cookies, so keep the balls small to give the signature soft and delicate texture.
