Swedish Egg Waffles

This recipe for egg waffles is a classic from Sweden. Traditionally, the batter is cooked with a heart-shaped iron. However, any shape of iron will work just fine.

Swedish Egg Waffles

Ingredients

  • 2 cups whole milk (475ml)
  • 10 tbsp butter (1 stick plus 2 tbsp; 150g)
  • 2 eggs
  • pinch of salt
  • 1 ½ cups all-purpose flour (185g)
  • ½ cup cake flour (65g)

Instructions

  • In a saucepan over medium heat, whisk together the whole milk and butter. Once the butter has fully melted, remove the mixture from the heat and allow it to cool. While the mixture is cooling, preheat and season the waffle iron as needed.
  • To the milk and butter mixture, add both eggs and mix until just incorporated.
  • Add the salt and flour and mix until the batter is smooth.
  • Cook the waffles until the color becomes slightly golden brown.
