Orange Olive Oil Cake

This is a version of the classic Olive Oil Cake with a bit of orange flavor added. This cake is light and spongy, and the citrus flavor is refreshing.
Orange Olive Oil Cake
Servings: 12 slices
Equipment
- 9-inch cake pan
- parchment paper
Ingredients
- 3 large eggs
- 1 cup granulated sugar (200g)
- ¾ cup extra virgin olive oil (180ml)
- ½ cup orange juice
- zest of one orange
- ½ tsp vanilla
- ½ cup Greek yogurt (120g)
- 1 ⅔ cups all-purpose flour (205g)
- 1 ¼ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- optional: powdered sugar for decorating
Instructions
- Preheat the oven to 350F (180C). Line the pan with parchment paper.
- In a separate bowl, beat together the eggs and sugar until light in color and slightly fluffy.
- Add the olive oil and mix carefully until incorporated.
- Add the orange juice, orange zest, vanilla, and Greek yogurt and mix until just incorporated.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Fold the flour mixture into the egg mixture and mix until combined.
- Pour the mixture into the prepared pan and bake for 45-55 minutes until lightly golden in color and a toothpick placed in the center emerges cleanly.
- Optional: Once the cake has cooled, sprinkle powdered sugar on top.
