Fettuccine
Equipment
- pasta roller
- knife or fettuccine cutting pasta roller attachment
Ingredients
- prepared pasta dough (see link below for our recipe)
- 1-2 L water
- pinch of salt
Instructions
- Start by rolling the pasta dough to the desired thickness. Using a pasta roller, feed the dough through the machine until the desired thickness is achieved. If using a Kitchenaid past making attachment, begin at setting 2. Roll the dough once, then fold the dough by thirds, before rolling it again at this setting. Increase to setting 3 and pass the dough through the machine again. Repeat this step, increasing to settings 4, 5, and 6.
- Cut the rolled dough into long thin strips of about ¼-inch width. If using a Kitchenaid pasta making attachment, roll the dough through the fettuccine attachment. Otherwise, use a knife to cut the strips.
- In a large pot, bring 1-2L of water with a pinch of salt to a boil.
- If serving with sauce, prepare the sauce before cooking the pasta.
- Place the cut fettuccine dough into the boiling water and cook for 2 minutes for al dente or until reaching the desired level of firmness. If serving with sauce, dry the fettuccine and place directly into the heated sauce to finish cooking for one additional minute.
