Peppernotter (Peppernuts)

These small cookies have a strong flavor of pepper and spices. Peppernuts are commonly baked in Norway, Sweden, Denmark, and other countries, and make an excellent addition to any winter or holiday cookie spread. If you particularly enjoy pepper-forward flavors or are looking to spice up your cookie offerings, this recipe may be for you.
Peppernotter (Peppernuts)
Servings: 80 cookies
Ingredients
- 8 tbsp butter (125g)
- ⅓ cup golden syrup (100g)
- ⅓ cup sugar (80g)
- 1 ½ cups all-purpose flour
- ⅓ cup cake flour
- 1 ½ tsp cloves, ground
- 2 tsp cinnamon, ground
- 1 ½ tsp ginger, ground
- 1 ½ tsp cardamom, ground
- 1 tsp black pepper, ground
- 1 tsp baking soda (or 1 tsp baker's ammonia)
- pinch of salt
Instructions
- In a mixing bowl, beat together the sugar and butter until smooth and pale in color.
- Pour in the golden syrup, and mix until just combined.
- In a separate bowl, whisk together the flours, spices, baking soda, and salt.
- Add the dry ingredients to the butter mixture and mix until just combined.
- Refrigerate the batter for at least 4 hours or overnight.
- When you are ready to bake the cookies, preheat the oven to 350F.
- Roll the dough into small balls of about 1-inch diameter and place the balls onto baking sheets. Parchment paper can help to prevent the cookies from sticking.
- Bake the peppernuts for 10-12 minutes or until they begin to darken slightly.
