These buttery Christmas cookies dusted with pearl sugar are a wintertime classic from Norway. Think sugar cookie meets shortbread, but these cookies are not overly sweet.

No special equipment is needed for this recipe.
Ingredients
- 3 cups all-purpose flour (375g)
- 1 cup cake flour (125g)
- ½ tsp baking powder
- 22 tbsp salted butter (2 sticks + 6 tbsp) (300g) (at room temperature)
- 1 ¼ cup sugar (250g)
- 2 tbsp vanilla sugar (see recipe) (or use 1 tsp vanilla extract & 1 tbsp sugar if you don't have vanilla sugar)
- 1 large egg
Topping
- 1 egg white
- pearl sugar
Instructions
- Whisk together the all-purpose flour, cake flour, and baking powder. Add the softened butter and mix until combined.
- Add the sugar and vanilla sugar, using a wooden spoon or your hands to mix. Add the egg and mix until just combined.
- Wrap the dough in plastic wrap and let it rest in the refrigerator overnight or for at least 8 hours.
- Preheat the oven to 350F. Remove small pieces from the dough and roll each piece into a small ball, approximately 1 inch in diameter. Place each ball on a baking sheet and lightly press down with your thumb to slightly flatten each one.
- Brush the cookies with egg white and sprinkle pearl sugar on top of each one. Bake at 350F for 16-18 minutes or until the cookies become lightly golden in color.
Notes
- These cookies can be topped with sliced almonds, instead of pearl sugar.
