Chilaquiles Verdes

This recipe for Chilaquiles Verdes is a take on the classic Mexican dish. Green salsa, jalapeños, avocado, and feta dominate here. I like to use eggs for protein, but chicken also works well.

Equipment
- skillet or other pan
Ingredients
- 1 tbsp olive oil
- ½ cup mushrooms, sliced
- 1 yellow onion, sliced
- 12 oz salsa verde or green tomatillo salsa
- 4 large eggs
- 1 medium bag of tortilla chips
- 1 avocado, sliced
- 1/2 cup crumbled feta
- dash of heavy cream
Instructions
- Add the olive oil, mushrooms, and onion to a skillet. Cook over medium heat until the onion starts to become translucent.
- Add the salsa verde and heat until lightly steaming.
- Add the eggs and cook until the desired firmness is achieved.
- Lower the temperature to low and add the tortilla chips. Let the chips soak for 2 minutes before removing the dish from the heat.
- Top with avocado, feta, and a dash of heavy cream and serve warm.
